Deliciocity Friday: Unbelievable Banana Bread

Peanut butter cream cheese filled chocolate chip banana bread.

Yeah, I'm going to let you think on that for a moment...

It's like all the best things together in one.

I started with a simple banana bread recipe.
 Then added the filling into a well cut out of the middle of the bread loaf.

Bread Ingredients:
Wet:
1/2 stick butter, softened
2 eggs
  2/3 cup sugar

Dry:
1 1/3 cup all-purpose flour
3/4 teaspoon salt
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/2 teaspoon cinnamon

Plus:
3 very ripe bananas
1/2 cup chocolate chips

First blend all the wet ingredients with a mixer.
In another bowl mix the dry ingredients then slowly mix them into the wet ingredients.
Lastly fold the mashed bananas and chocolate chips into the batter.

I poured these into well greased little loaf pans and I think baked about 25 minutes. A regular sized loaf pan would probably bake for closer to 50 minutes.
When you stick a clean tooth pick in it should come back out clean.

Once done baking I turned out onto a cooling rack and when cooled I cut into the top to create a well for the filling.

Filling:
8oz cream cheese
1/2 cup powdered sugar
1/4 cup milk
3 tablespoons creamy peanut butter
(peanut butter was a guesstimate based on taste)

Blend all together, you want a slightly thick but creamy filling so adjust the peanut butter for best look and taste.

Pour into the well in the loaf then cut off the top that you cut out and replace.

It is unbelievable how creamy and delicious this turns out!

Deiciocity Friday: Nearly Chocolate Overload Cupcakes

Yellow cupcakes with chocolate chips, chocolate chip cream cheese filling and chocolate frosting.
These would be chocolate overload except I used yellow cake mix. You could easily go all out and make everything chocolate by using chocolate cake mix.

Cake:
Yellow cake mix
Ingredients required on cake box
1/2 cup chocolate chips

Filling:
8oz cream cheese
1 egg
1/3 cup white sugar
1 cup chocolate chips
Dash of salt

(also need frosting of choice)

Start by making the filling. Allow cream cheese to get to room temperature. Meanwhile chop the chocolate chips up, either by hand or via a food processor. Using a beater, mix the cream cheese and egg. Once mixed add in the sugar and salt. Finally fold in the chocolate chip pieces.
 Set aside.

Preheat your oven and prepare your cupcake pans as directed. 
Mix your cake mix like normal, when finished gently fold in your chocolate chips.

Begin filling your cupcake liners. Fill about 2/3rds full of cake mix. Do not go over or you'll end up with mushroom cloud cupcakes. Then add about a tablespoon of your filling on top of the cake batter.
This should make more then the usual 24 cupcakes so be prepared for that.


Bake as directed, allow to cool then frost.
Makes a moist cream cheese cupcake that is oh so delicious!

Deliciocity Friday: Cream Filled Carrot Cupcakes

The filling is a bit sweet like a cupcake, but the cake density is sort of like a muffin. However the recipe would probably make some good bread also...
 Confused you yet? :)
I made my batch into just over 12 cupcakes, but next time I'll probably do it as about 1 loaf of sweet bread.



First the filling:
8 oz cream cheese
1/4 c sugar
1/4 tsp vanilla flavoring
 Microwave the cream cheese just enough to make it soft and creamy (maybe 30 seconds), then mix in the other ingredients and set aside.
Preheat oven to 400 degrees F

Cake:
2&1/4 c flour
2/3 c sugar
1/4 c brown sugar
1&1/2 tsp baking powder
1/4 tsp baking soda
2 tsp ground cinnamon
3/4 tsp ground ginger
3/4 tsp salt
Whisk all these ingredients together.

In a separate small bowl, whisk together:
2 eggs
3/4 c water
1/3 c vegetable oil

Whisk the wet ingredients then carefully stir them into the dry ingredients. Don't over mix.
Lastly fold in 1 cup grated carrots (about 2 carrots) 
If making cupcakes, line the pan with cupcake papers. If making a loaf of bread then spray the pan with nonstick cooking spray.

Fill your baking container with about half of the batter. Then add in the cream cheese filling and finish by using the rest of the batter to cover the filling. 
Bake for about 17-19 minutes.
It's not necessary to frost them, however, if you want more sweet to your cakes you could frost with more of the same recipe as the filling or with a regular cream cheese frosting.
